Okra and Eggs Stir-Fry

Ingredients:

1 pound okra, trimmed and sliced
2 eggs, beaten
2 tablespoons cooking oil
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions:

Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
Add the okra and cook, stirring occasionally, until tender-crisp, about 5-7 minutes. Remove from the pan and set aside.
Add the remaining 1 tablespoon of oil to the skillet and heat over medium heat.
Pour in the beaten eggs and cook, stirring gently, until scrambled.
Add the garlic, salt, and pepper to the skillet and cook for 1 minute more.
Return the okra to the skillet and stir to combine with the eggs and seasonings.
Serve hot with rice
