Ingredients:
2 pounds chicken wings, cut into drumsticks and flats
1/2 cup pineapple juice
1/4 cup soy sauce
1/4 cup brown sugar
2 cloves garlic, minced
1 teaspoon ginger, grated
1/4 cup pineapple chunks
1 tablespoon cornstarch
2 tablespoons water
Salt and pepper to taste
Instructions:
Preheat oven to 400°F (200°C).
In a large bowl, combine pineapple juice, soy sauce, brown sugar, garlic, and ginger.
Add chicken wings and toss to coat. Marinate for at least 30 minutes.
Place wings on a baking sheet lined with parchment paper.
Bake for 25-30 minutes, or until cooked through.
While the wings are baking, mix cornstarch and water in a small bowl to create a slurry.
In a saucepan, heat the remaining marinade over medium heat. Add pineapple chunks and bring to a simmer.
Slowly add the cornstarch slurry to the sauce, stirring constantly until thickened.
Remove wings from the oven and toss with the pineapple sauce.
Serve immediately.
