Pork Rib Soup with Carrots, Corn, and Radish

Ingredients:

1 lb pork ribs, cut into 1-inch pieces
1 large white radish, peeled and cut into 1-inch chunks
1 large carrot, peeled and cut into 1-inch chunks
1 ear of corn, cut into 2-inch pieces
1 piece of ginger, sliced
3-4 cloves garlic, minced
8 cups water
Salt and pepper to taste
Green onions, chopped (for garnish)

Instructions:

Blanch the ribs: In a large pot, bring water to a boil and add the pork ribs. Boil for 2-3 minutes, then drain and rinse the ribs under cold water.

Cook the soup: In the same pot, add the blanched ribs, radish, carrot, corn, ginger, and garlic. Pour in 8 cups of water and bring to a boil.

Simmer: Reduce the heat and simmer until the ribs and vegetables are tender.

Season: Add salt and pepper to taste.

Serve: Garnish with chopped green onions and serve hot.
