Instructions:
1. Bring a large pot of water to a boil and cook the udon noodles according to package instructions until al dente. Drain and rinse with cold water to stop the cooking. Set aside.
2. In a large skillet or wok, heat the butter and olive oil over medium-high heat.
3. Add the sliced mushrooms and sauté for 5-7 minutes until mushrooms are browned and tender.
4. Add the minced garlic and sauté for 1 minute until fragrant.
5. Pour in the soy sauce, broth, heavy cream, mirin and sesame oil. Simmer for 2-3 minutes until slightly thickened.
6. Add the cooked udon noodles and green onions. Gently toss everything together until the noodles are coated in the creamy mushroom sauce.
7. Season with salt and pepper to taste.
8. Transfer to serving bowls and garnish with extra green onions and a sprinkle of sesame seeds.
You can use any variety of fresh mushrooms you like in this dish. The creamy sauce coats the chewy udon noodles perfectly. For extra protein, you can add sautéed shrimp, chicken or tofu. Adjust the amount of broth or cream to get your desired sauce consistency.
